From Adam Evens at The Optimist in Atlanta:

"Shake a hard-boiled egg in a small glass half filled with water. The shell will come right off."

 
2 weeks ago, working in a catering prep kitchen, I had to peel 200 eggs

(for a 400 person event) that another chef had 'boiled' for me the previous night! OMG, it was not pretty. smileys/wink.gif
Next time I want to be the one to cook them. Steaming is the way to go. smileys/smile.gif

 
Oh yes, that too! And lately I've been put on

'protein duty' (among other tasks) where I've been breaking down whole beef tenderloins (5 to 9 lb size) -- trimming fat and membrane, removing the chain, and cutting tenderloin into medallions or cutting for skewers then marinating ...for events ranging from 150 guests to 800. Sometimes my protein task is an all day affair. Catering work is so interesting and varied.

 
LOL Pat. Yeah, sometimes not the dream job others think it is, eh?

I remember well....like one day shelling and deveining 200 lbs of medium size shrimp. Or peeling 5 lbs of garlic cloves. One day I had to roll out and cut 10 lbs of fresh pasta. All those things happened because my kitchen prep help couldn't get there to assist me at different jobs. Ah, the memories....

 
Oh yes, and keep that tail on when you're peeling the shrimp, lol. It really

is fun playing with food, no matter the task (and getting paid to do so). smileys/smile.gif
