I bought a purple and white eggplant that was supposed to be just picked on Sunday but it was soft on Tuesday. I was going to toss it yesterday but couldn't bring myself to do it! Can it be used? Colleen
I cut it in half (to take a look-see), char broiled and then roasted. The Baba was mild and smoother than I would have liked - due to the type of eggplant used - but very tasty. Thanks for your advice and encouragement. I'm glad I didn't toss it out! Colleen
