FRQ - Can I roast a ripe eggplant for Baba Ghanoush - the truth, please

I bought a purple and white eggplant that was supposed to be just picked on Sunday but it was soft on Tuesday. I was going to toss it yesterday but couldn't bring myself to do it! Can it be used? Colleen

 
I think it should be fine for what you're doing with it as long as it smells fine.

If there are any discolored spots I would cut them away.

 
Turned out great!

I cut it in half (to take a look-see), char broiled and then roasted. The Baba was mild and smoother than I would have liked - due to the type of eggplant used - but very tasty. Thanks for your advice and encouragement. I'm glad I didn't toss it out! Colleen
