When millk sours on its own it is history--DO NOT use it for pancakes as she suggests.

You can "sour" milk and use it by adding lemon juice or vinegar and sub for buttermilk.
I guess if it has just "turned", use it. ;o)

 
I have heard that pasteurized mikl can go bad, as in rotten bad . . .

before souring, like milk did before common pasteurization. Sour milk good (but more unlikely), rotten milk bad (more likely, tastes bitter, you don't want to know how I come upon this knowledge!).
