The addition of achiote powder and mexican beer gave it a very pleasant acidic edge. Very tasty stuff!

I made two changes: I added the juice of one lime to the garlic/achiote/spice paste. Mine was too dry. I also had to add 2 cups of chicken broth at the end. The rice absorbed a lot of liquid.

The house still smells good today.

Glad you enjoyed it! I felt the paste was dry also, just didn't know what to do about it. I'll take

your advice next time. I used jasmine rice and it seemed fine. I also used white wine but am trying with beer next time. Thanks for the tips!

I made it too! I too doubled the spices, and needed more heat, so I added some roasted

poblano chiles and extra chicken broth as well.
It was really great. Thanks for the recipe and inspiration!
