looking forward to pressure cooking corn-on-the-cob.

Still love the Instant Pot for sooooooo many don't-have-to-watch-it recipe conversions. I'm not finding "using pressure" to save total time but love, love, love set-it-and-forget-it! Colleen

 
Colleen, try this method for corn.

I saw this on either ATK or Cooks Country, but I tried it and it works beautifully.
I have a "power boil" burner on my gas stove, so bringing the water to a boil takes no longer than getting the pressure cooker up to pressure.

Corn cob stock

Chunk up the cobs and throw them in with enough water to cover. Pressure cook (I think I went 90 minutes) and then strain through cheesecloth. From there you can use it to make a corn chowder but the stock is sweet and is best used to make corn cob syrup for biscuits and pancakes or corn cob jelly.

Gave up boiling corn years ago in favor of steam-in-husk (with no prep) at 3+or- minutes in the microwave. Colleen

i don't like to deal with the husk and silks when it's hot and cooked. Also for a

crowd it doesn't work for me. I usually drain the corn and add the butter salt and pepper and put it in a bowl for serving. ;o)

 
I am so envious of that power boil burner. I usually underestimate time it takes on electric burner.

 
Agree. I freeze the blanching liquid after prepping corn for freezing. Usually combine with chicken

broth for soups. Works well for Thai curries.

 
Got our first Michigan corn dozen yesterday

First 4 eaten were amazing! With the 2 of us, we'll see how many we can consume in the next couple of days. Will get more for freezer next Sunday. Colleen

I ended up making our favorite corn chowder recipe adding 2 broken up corn cobs. The final product was definitely better! Freezing remaining 2 cobs for next batch. Colleen
