I contacted Dixie Crystals & they confirm that 5 tablespoons of yeast is correct for the heavy sweet dough. Watched a video of it being made too and it was indeed a large amount of yeast/water paste being used.

And Gay, for the video. I want to try this, but will definitely not be using my precious fresh yeast for it.
