after I almost scalded myself testing caramel with a probe thermometer that S.L.O.W.L.Y crept up to temp while I had my hand inside the pot. At 346 degrees temp, that's a dangerous situation, sort of like dangling your fingertips leisurely in the baby alligator pool.

So...what should I test next? I tested our chicken thighs last night...(overcooked).
