Gifted myself an early present: a bright green Thermapen. This happened

after I almost scalded myself testing caramel with a probe thermometer that S.L.O.W.L.Y crept up to temp while I had my hand inside the pot. At 346 degrees temp, that's a dangerous situation, sort of like dangling your fingertips leisurely in the baby alligator pool.

So...what should I test next? I tested our chicken thighs last night...(overcooked).

Linda Stradley has a thermapen chart on her website which tells you all the

temps for baked food, meats, fish, poultry. Never knew I could check my baking potatoes that way. Even cakes, quick bread, and so much more.

I tested sourdough bread loaves last night. who knew?

Bread is a GREAT use for an instant read thermometer if you don't have a thermapen.
