Gluten Free Cookies - anyone made them before?

I just made a batch using Bob's Red Mill 1 to 1 flour. I needed to up the sugar in them to get them to an acceptable taste. (I also added lemon zest). But I would only call the acceptable.

If anyone has ever tried them before how would you compare the taste of a good gluten free cookie versus a regular one.

Ive been making them playing around some. Will post a couple that have turned out.

 
Not sure what happened there that being said I've been playing around

With them a bit I also prefer coconut flour over almond flour as almond is more grainy will post a couple when I get home later.

 
So what I've been doing for baking is sub 1/4 cup coconut flour for 1 cup flour you can do this

With most baking so I use 1/ 4 cup coconut flour 3 cups oats, 1 cup peanut butter, 1/2 tsp soda, 2 eggs , 2/3 cup coconut sugar and 1/3 cup sugar. Add ins can be whatever you want I use trail mix , m&m whatever I feel

 
Coconut flour soaks up more liquid so you can replace only a small amount of gf flour with it AND

You need to add more liquid, or eggs. I think for every 1/4 cup coconut flour you need an extra egg
