Princess Salad
Serves 6 to 8
1/2 cup sesame seeds, toasted
1/4 cup grated Parmesan cheese
10 ounces fresh young spinach, washed, coarse stems removed, and crisped
1 bunch leaf lettuce, washed and crisped
Dressing
1/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon tarragon vinegar
1 tablespoon sugar (optional)
1/4 cup minced green pepper
2 tablespoons minced onion
Salt
1/4 teaspoon garlic powder
Combine the toasted sesame seeds and cheese and set aside.
Tear spinach and lettuce into bite-sized pieces and place in salad bowl.
Combine all the dressing ingredients and blend well. Toss greens with dressing and three-quarters of sesame seed mixture. Sprinkle salad with remaining sesame seed mixture.
