Going to a potluck this weekend where we all bring food for the wood-fired oven. Ideas?

We will start with making pizzas in a super hot oven and as it cools we can cook/bake any number of things (meats/bread/desserts: a whole meal).

I love wood-fired artichokes - you split them down the middle, slather with some olive oil and

seasonings and roast to perfection.

Another thing that comes to mind would be dutch oven recipes - I'll bet they would translate well to the receding heat of wood-fired oven as it cools.

Well, these failed. Boo. I presteamed for 10mins, but they burnt on the outside and never cooked on

inside.

I pre-steamed them for 10 mins, then split them and brought on a baking tray covered in foil. The host decided to just put them straight on the stone in his oven and we got charred/dried out on the outside, but not cooked on the inside. So 6 huge artichokes ended up as compost.

Now what do I do with a VAT of aioli? I made a small batch from a recipe online (1 egg/4 raw cloves of garlic) and it was so garlic-y a tiny taste burned my mouth. I had to add an entire container of mayo and then almost as much borrowed from a neighbor, resulting in a medium mixing bowl of the stuff that due to the artichoke fail was unused.

Now what?

I'm sorry it didn't work out for you. It seems the oven was too hot.

For super high heat, it might have worked better to steam them thoroughly, coat well with olive oil and some salt, then wrap in foil for a short sit in the oven.
