Good enough to post about- empty the fridge mac & cheese

I love mac & cheese but rarely make it. All the planets lined up the other day and I had stuff to use up in the fridge. I had Bechamel. I had some homemade pesto. I had baby spinach but not enough for a salad. I had super-ripe avo, I had half a can of black olives.

Sooooo- I heated the Bechamel, put 4 kinds of cheese in it (I used pepper jack, cheddar, Asiago and American), thinned it down and dumped in some pesto. Good start.

I cooked pasta. I took a small roasting pan and spread the raw spinach in it then dumped the olives in. I chopped some onion and sprinkled over the top. Then in went the cooked pasta followed by the cheese/ pesto sauce. I chunked the ripe avo on top of it all and slightly blended it. Then a sprinkle of Asiago over the top and into the oven. Jeez it was good, maybe the best mac & cheese I've ever made. Big hit with DH. The avo was great in it.

Looks delicious! I made mac n' cheese last night:)

I've been making it lately w/ orecchiette; little scoops for the sauce.

I don't follow a recipe - just saute some finely cut shallots in butter, than add a bit more butter and an equal amount of flour. Once the roux is made - I use a mix of evap milk and heavy cream for the sauce and add a some velveeta, lots of sharp cheddar and a bit of mustard. I freeze individual servings and heat them up with some more evap milk.
