Every diet plan I've followed since 1970 blew up in the face of this "Low Carb" dish. Honestly, it was like being transported to a parallel universe where FAT is okay.
We ate almost the entire casserole. Quite possibly the only reason there were a few tablespoons left was because our Catholic upbringing suddenly flashed "Gluttony is a Deadly Sin" in our brains.
Oh, and I used two (2) cups of shredded PepperJack cheese because when there is conflict in instruction, I will always choose MORE CHEESE. Would HIGHLY recommend that option. And I sprinkled on Italian-seasoned bread crumbs. But this probably violates the Low-Carb-ness of the dish.
