Plus it was beautiful...a billion calorie casserole filled with bubbly golden cream and cheese, blanketing a practically zero-calorie head of cauliflower.

Every diet plan I've followed since 1970 blew up in the face of this "Low Carb" dish. Honestly, it was like being transported to a parallel universe where FAT is okay.

We ate almost the entire casserole. Quite possibly the only reason there were a few tablespoons left was because our Catholic upbringing suddenly flashed "Gluttony is a Deadly Sin" in our brains.

Oh, and I used two (2) cups of shredded PepperJack cheese because when there is conflict in instruction, I will always choose MORE CHEESE. Would HIGHLY recommend that option. And I sprinkled on Italian-seasoned bread crumbs. But this probably violates the Low-Carb-ness of the dish.

Oh I so agree. I did this tonight with all the crappy cheese sauce that I made for mac and cheese

for one. Horrible sauce. Bad cook. Bad weekend. Used one of the bags and ................

with the addition of the mustard (and there were some peppers in my sauce), this was a treat on cauliflower. I think I enjoyed the not so slippery cauliflower with the sauce as opposed to the mac which the sauce just oozes away from.
