I saw this on a blog called Stacey Snacks and tried it today over pasta. It was good but next I think I will try it on baguette slices, baked with some olive oil and parm at 350 for 10 min. Healthy and easy and good.
1 small head of cauliflower cut into florets.
kosher salt
1 garlic clove (I used 2)
1 C parsley
2 Tbs drained capers
1/2 C to 3/4 C olive oil (I used a scant 1/2 C)
1/4 golden raisins ( I didn't use)
Roast cauliflower in 400 degree oven for 30 min.
Put all but olive oil in cuisinart and pulse a couple of times and then add olive oil and pulse a few times to have a chunky consistency. Season with s&p to taste
