I bet all of you have a favorite way to fix artichokes- I love them with Aioli used as a dip but mostly my DH loves them this way.
BAKED STUFFED ARTICHOKES
2 large artichokes, trimmed and with a deep "X" cut in bottom
Steam, upside down, until tender, about 20 minutes. Cool.
2 C dry bread crumbs
3 T butter
3 garlic cloves, crushed
1 tsp pepper
1 T chives or parsley, chopped
1/2 C Teleme or Jack cheese, shredded (Teleme doesn't shred well so just do your best)
2 T Parmesan cheese
1 C Marie's Creamy Garlic Dressing
Melt butter. Add garlic and crumbs, and mix together. Add pepper and chive. Set aside to cool.
Open the leaves of the artichokes, take out the center cluster, and scrape the "hairy" part. With your fingers, stuff the leaves with the crumb mixture. Add some of the cheese into the leaves. Sprinkle the tops with Parmesan.
Preheat oven to 375°. Bake the artichokes, tented with aluminum foil, for 15-20 minutes or until all cheeses are melted. Let cool down for 5 minutes, then spoon the Marie's dressing onto the artichoke.
