and such a lovely color. I added 1 tsp vanilla and I left one of the clementines whole for some peel. I accidently added 3 cups of flour(got distracted with the 3 clementines), so I added about 1/4 cup of water and it baked up just fine. I would have added some orange juice, if I had some. I iced it with some canned vanilla frosting that I had on hand and I thinned it with one more juiced clementine. made a lovely coffee cake for work this morning.http://www.eat.at/swap/forum6/35_Clementine_Bundt_Cake

 
Nigella has a wonderful clementine cake. Google it and it will come

up along with a chocolate clementine cake. It involves simmering whole clementines for an hour or so, as I recall and then a whirl for them in the food processor. I used to do this at the end of the season and then save it in the freezer for cakes all summer. Always a huge hit. No flour, just almond meal.

 
P.S. If you live in a climate where you can grow citrus, plant one of these tangerine trees.

You will not be sorry! We loved our "Cuties" tangerine tree. It had fabulous yields and was completely carefree. We loved it! Our actual tangerine tree was a Satsuma, but the fruit was seedless, sweet and easy to peel.

 
I have made Nigella's clementine cake many times - while the fruit is cooking

I blitz up the almonds in the Cuisinart. then blitz up the cooked fruit. It was wonderful. I think I shared the recipe here a million moons ago...

Made the cake!

Of course, me and cake is a dangerous combination. Two burns on my right hand. Powdered sugar spilled on the floor (that I had cleaned that very morning). Spilled half a bottle of orange extract (I tweaked the recipe) over the counter. You can still feel a hint of smell hours later.

Finally, the icing was not thick enough and the cake won't win any beauty contest. I hope it will taste good. I am going to slice it tomorrow morning and take to the department already sliced, so that the boo boos on top won't be too evident.

I often wonder why I insist on cake baking.... smileys/wink.gif
