Grandbaby in hospital with salmonella + eggs

We don't know where he picked it up but he had diarrhea and fever last Friday and spent last three nights in hospital to get IV fluids.

I am making little Greek quiches in small muffin tins. What temp must they reach to be safe for a one_year old?

Salmonella is killed at 140*. If you cook a quiche to be done it will be ok. But after a

bout with an intestinal germ and its concomittant stuff, I would be giving the little guy very bland food--as I always tell my kids, "white"--egg whites, grits, mashed potatoes, farina, etc.

All done and overcooked, no doubt.

Charley, thanks! These went into the freezer for future use, maybe next week.
He is still in the hospital where he started with a plain pancake yesterday, then Cheerios and oatmeal. Chicken was to be tried today.
I'm with you on the bland diet until his intestines recover.

So sorry to hear your little one is sick. Stay away from fresh fruit except he/she can have

bananas that are on the firm side--not ripe ones.
