Grandie has asked for a "strawberry cake" for birthday this week any ideas

I was thinking a simple Victoria Sponge with fresh strawberries and cream but there could be other ideas from you chaps. TIA

 
For as many years as I can remember, my Dad's B-D cake has been

a strawberry shortcake.
I know that there a lot of regional variations to this dessert, but his has to be a biscuit (not too sweet), split with crushed berries on the bottom, put on the top, more crushed berries, then whipped cream, then whole or sliced berries on top. We usually do individual biscuits, but have been known to do this as a single large "cake" that was then sliced for serving. (Please don't ask how long we've been doing this)
It has always been easy, since his birthday is mid-June at the height of strawberry season here in
the northeast.
Would grandie be happy with something like that?

Judi this appeals to me too.......

not too sweet and crispy BUT it must be a cake, large enough to put candles on it and sliced to share...please post.

 
If I make this, the evening before will it be fine tthe next evening to fill?...

that is the problem with the Victoria sponge as it is the bestest when it is fresh and warm....

 
Oh sure, you can even make the layers ahead, wrap and freeze until you need.

Thaw them at room temp before frosting/filling. I've even made, filled and frosted the whole thing the night before, then kept in fridge for a party the next morning. The whipped cream frosting barely softens in that amount of time.
