Great appetizer: Roasted Red Pepper Shots. Very tasty and oh, so easy.

This is in my fridge chilling. Here are my tweaks...

I added a little Piment de Espelette, then tasted. I then squeezed in about one teaspoon of the tomato paste in a tube. It is really great. I think I will have this for lunch and put a little lime zest on top. Or maybe toasted, candied sliced almonds I have from a salad. I can see so many possibilities for this. A little heavy cream drizzled on top and then swirled to make a design like many good coffee houses do with their drinks would be so pretty. Love the color and it really popped when I added the concentrated tomato paste.

 
Sounds great. I minced some fresh basil to put on top.A drizzle of fresh herb oil would be good too.
