I'm not familiar with their properties when cooking or serving - do they sit well w/o browning?

How do they bake.... mushy for applesauce, or retain their shape?

They don't brown and are very crisp, and don't break down when cooking/baking. They have

a delicious tangy/sweet taste.

That's so good to know! Not everyone likes the intense tartness of granny smith smileys/smile.gif
