Great strawberry tort idea from Germany

...the big, well-formed strawberries in full season it shouldn't be hard to pull off!

We loved the fact that in Germany you could purchase as much cake as you want--a slice; 1/4; 1/2 or

the whole thing.

 
My first thought was: "I'd have to add food coloring to get the strawberries RED."

Now, instead of Freon Envy, I have Euro-fruit Envy.

 
This brings up a point...why is it so hard to find strawberries that are red all the way through?

I r eally dislike those white in the middle berries. They are not as sweet or as tasty. So far this year, I have not found any.

 
Is it dependent on the variety of strawberry? We have many different ones at our

farmer's markets right now - all are very ripe, but some more red throughout than others.

They sure are beautiful!

 
Many growers are more concerned about shipping than taste...

This was part of the reason I went on a mission to find Fairfax berry plants.

Whole Foods had some last yr (waiting for them this yr) that were smaller and from either Halfmoon Bay or Davenport, can't recall which, but look for those. They were $1 more, but so worth it.

Smaller is often better, the larger size are the ones bred for shipping and I won't even buy Driscoll's.

You might try Swanton Farms out of Davenport, they are a organic leader in the strawberry market (It might be their berries I had from WF) I linked to where they sell at FMs in case there is one near you.
