Grilled chicken and Winter veggies

Not quite a recipe because I threw it together in a hurry tonight.

I had pumpkin, kumara (a NZ sweet potato), and courgettes (zuchinni in the US). I grilled all that.

Also grilled chicken breasts, which I had cut in half lengthwise.

I reduced some white wine with chopped garlic, added heavy cream and reduced some more. I poured that into a blender with handfulls of fresh basil, and blasted the heck out of it.

The photo was just a snapshot taken quickly, no setup or anything, but it gives an idea smileys/smile.gif

Oh yum! I would give my kingdom for a grill! I have a stovetop one but no ventilation in my kitchen,

So when I use it my whole apartment fills with smoke, I have to open all the windows and fan the kitchen with a jellyroll pan and pray no one calls the fire department for the smoke billowing out the windows! Fortunately the smoke detector on my ceiling conked out (and it's a 12' ceiling so I can't reach it to replace the battery). Ah, tales of urban studio living!!!!

Nic, your sauce looks fantastic, how much wine did you use? My pal Anna has an actual backyard with a weber so I get my grilling fixes fulfilled over there and would like to try this!

Lack of ventilation sucks, or not, depends how you look at it smileys/wink.gif

Our kitchen fan is quite good smileys/smile.gif Very lucky.

Sauce... Hmmm. I'd say I put about 200ml of white wine, reduced to half, about 75ml of cream, reduced "a bit". I had a couple teaspoons of chopped garlic in there as well. a BIG handful of fresh basil in the blender. Pouring the hot reduction in the blender over the basil was enough cooking for the herb. Then blend the heck out of it smileys/smile.gif
