RECIPE: Grilled Sticky Buns and REC: Stupidly Simple Caramel Sauce

As some of you know, I am ovenless. While I was able to get over not being able to do any Christmas baking (wah!), I simply couldn't not serve our traditional Christmas breakfast of sticky buns. The Weber grill just outside the back door seemed like a viable alternative.

Since I had no time to test it out before the big day, I cheated and used a package of Pillsbury Grands Cinnamon Rolls as the base. I didn't want to put the caramel makings under the rolls in the bottom of the pan for fear of burning, so decided to make a sauce to pour over the warm rolls as they came hot off the grill. Added some pan-toasted nuts, and Bob was my Uncle, so to speak.

While this is not my preferred method of doing sticky buns - it did work rather well, and I got this simple and wonderful caramel sauce out of the deal.

Stupidly Simple Caramel Sauce

1 cup each:

butter

granulated sugar

brown sugar

corn syrup (Karo)

sweetened condensed milk (= one 14 oz can)

Stir over medium heat until well combined. Cook until btwn the soft ball and hard ball stage (I actually use the water test, so can't remember the thermo temp for these stages). Remove from heat, dip a spoon and swoon away.

It is great warm or cold off a spoon from the fridge.
