Guy's Chili Cook-off at work. Girls are to bring in sides/desserts. What would you bring?

For Sides: Stuffed potatoes with sour cream, extra sharp cheddar, and scallions or cornbread or

corn salad, coleslaw, pasta salad, potato salad or mixed green salad.

 
For dessert: Natilla, creme caramel, Mexican-spiced chocolate cookies with cinnamon, cayenne or

chili powder, etc., Tres Leches Cake, Brownies with or without Mexican spices (the recipe from The Baked Bakery is my new favorite!), Mexican Chocolate Icebox Cake, something lemony, such as Lemon Bars, or limey, such as Key Lime Pie.

 
I have to say, I saw Marilyn's post shortly after she posted and I honestly

had NO clue! What great ideas these all are and what a place we have here huh?

 
How about those bacon-wrapped jalapenos stuffed with cream cheese?

On second thought, those are probably best right out of the oven, eh?

I like the 'walking tacos' idea - open the bag of fritos and spoon in some chili...

top it all off with a little sour cream, cheese and chopped onions

 
REC: Corn Salad

This is a really good salad. I've made it several times now, but most recently over the holidays as a side to a chili supper. It is always well received. Don't add the corn chips until right before serving.

Paula Deen's Corn Salad

2 (15 ounce) cans whole kernel corn, drained
2 cups grated cheddar cheese
1 cup mayonnaise
1 cup green peppers, chopped
1/2 cup red onions, chopped
1 (10 1/2 ounce) bags coarsely crushed Fritos chili cheese corn chips

Mix first 5 ingredients and chill. Stir in corn chips just before serving.
