The baked salsa is a great dish for noshing while folks were doing last minute prep and hanging out having drinks.

I made the "sauce" for the shrimp earlier in the day, so when people came over, all I had to do was cook off the shrimp and toss it in the olive oil/garlic mixture. This was a huge hit. Again, great for noshing on with drinks, but then later, we made shrimp tacos with cojita with what remained. So good!

The other true star of the show was the black bean and mango dish. Surprising, flavorful, and it had a nice light element to it. Loved it!

* Edited to correct/add. We had steak tacos, not carnitas (my Spanish needs some help!) and I forgot to add the dessert. This recipe I picked up at the Worlds of Flavor Conference at the CIA last year. It was one of my favorite dishes from the weekend.

 
Ditto to that! Was watching Rick last night on PBS making a mole sauce, etc. Yes, please

post your menu in the menus section. I'm in a Mexican mood again and I bought some frozen Key West wild pink shrimp on sale and chipotles in adobo sauce. Haven't figured out what to do with it yet.

Thanks Traca. My Mexican section runneth over. No excuses now. Wondering if you ate

the dessert (at the conference) with choc cookies or just the curls. It's all such an unusual combo for me.

 
They served it with a baton of chocolate--like a chocolate stick in a clear plastic

"rocks" glass. It's very pretty. Years ago, I made a terrific avocado ice cream from "Perfect Scoop" and was intrigued to see someone else using avocado in desserts. So good!

 
Why did I buy the shrimp and chipotle peppers just yesterday? Because

it was meant to be for this recipe!
