Had dinner at Buca di Beppo last night which I realize in the culinary equivalent of eating

cheese whiz but my dining companions were two 5 year olds, a 6 year old and their very hungry, I don't care as long as it is food, father. Anyway, I had the salmon with pesto. It was roasted and topped with a pesto cream with sun dried tomatoes. It was actually pretty tasty and I think I could even make it better at home. Anyone have a recipe to get me started. It could make a great dinner party dish if I can figure it out.

Just noticed the recipe uses only about 3/4 cup chicken stock,but the ingredient list says 2-3 cups

 
It's really not bad for a chain restaurant. It's family-style Italian comfort food, big portions,

and their eggplant Parmesan is excellent. My Italian father loves it, and the first time he took us there I have to admit I didn't realize it was a chain.

Compared to Olive Garden, it's gourmet.

 
Buca di Beppo...Babbo Enoteca... Word play is fun. We had lamb burgers over...

...the weekend. My son put salsa on his, and called it a lamburguesa.

I asked him if he knew what an italian lamburger was called.

"Dad. No, Dad".
