Mexican corn salad and they ate it all and asked for the recipe.I didn't totally clean out the jalapenos so they still added some heat. Fantastic recipe...thanks, Judy!

 
Had it tonight for dinner. Very good even though my ingredients were sub-par. The

corn was 2 weeks old and getting dry, I couldn't find cotija cheese, so I used some feta. Sautéed in clarified butter and wow...those kernels POPPED like crazy. I was across the room and at least 30 of them shot from the wok. It was like a fire works display that went amok. A screen splatter guard is an absolute...unless mine went crazy simply because the corn was drier and my wok too hot?

I minimized the onion and garlic (not my favorites) and had half an avocado that needed to be eaten, so that went in too. It's a good addition. I also think my feta was getting old because it had a tanginess that I wasn't expecting. But then I haven't been eating much cheese lately so that could be it. I'll try to get the cotija next time...WALMART carries it.

Enjoyed it with organic blue corn chips (Garden of Eaten).
This is a keeper...well, so long as the corn is fresh.

I made a 1/4 recipe with canola spray instead of the vegetable oil, used feta and pickled jalapeño slices (we're not big on very spicy) but next time I make this, I noted to remember to use the chopped jalapeños we have in the freezer smileys/smile.gif if I don't have fresh on hand, and to double the corn (lower fat). It was the quantity of a "garnish" for the 2 of us - we only had 1 ear of corn but all of the other ingredients. Yum! Colleen
