Ham-ing it up

I have a good sized fresh ham that I deposited in my freezer around Easter. Was wondering if anyone had any ideas for a pulled pork kind of approach that would work in an oven.

 
Years ago there used to be a Heavenly Ham in our city. I stopped by there one day

and got a Hevenly Ham Salad Sandwich. That was a memorable sandwich. I wish I had their recipe for that ham salad. It was to die for.

 
Not pulled pork, but have you ever made cochinta pibil? It would be great with a fresh ham.

Cuban roast pork would be good too. Here's one:

Cuban Roast Pork Recipe


1 day | 1 day prep | SERVES 6
5-6 lbs pork roast, shoulder,sirloin
3 cloves garlic, peeled and slivered
1/2 cup orange juice
1/2 cup lime juice
1 tablespoon oregano, ground
1 teaspoon cumin
1 teaspoon black pepper
1 tablespoon salt, to taste
1 large onion, sliced
Trim fat from roast, if any.
With a sharp knife, cut tiny holes in roast and insert slivers of garlic.
In large plastic bag, place remaining ingredients.
Shake to mix well.
Place pork roast in bag.
Place in refrigerator, at least overnight.
Remove roast from marinade and discard.
Preheat oven to 275 degrees F.
Place in covered baking pan and cook for 5-6 hours.
Turn once during baking.

Hmmm, no green eggs jokes (LOL)

The Matt Lee idea is the winner for me. For some reason I see a Southern country breakfast in my minds eye.
