I made this for brunch today and really loved it! I did make my own simple version of it a few years ago when I bought my first Mexican chorizo but didn’t think to add onions.
I halved the recipe but used a whole medium white onion (because I like lots of onions) and Mexican chorizo. I didn’t add tortilla chips. I didn’t even have toast with it but bet that it would be good served over same topped off with a dollop of sour cream and chives?? Hmmmmmm.....
No, I did not have a hangover but know that I would crave this if I did (along with 2 liters of Pepsi) LOL
