I've done this following Gisene's instructions. It's actually very simple if you use a printer to write out the text, then flip it over, pipe the lettering and then cover with the sponge cake batter. I made this one for our library's volunteers: the theme for the luncheon was "Our Volunteers are Royalty." Color scheme was green, purple and gold---so I used a lot of leftover Mardi Gras decorations. I wrote each volunteer's name on the chocolate suckers and stuck them in faux foam bases covered with fondant that I had colored. The small candies were Crack Candy.

PS: And also on the "We The People" cake Maria posted. Most impressive--not sure I could crank one out even AFTER viewing the video.
