Hi all, it has been a while since I have stopped by but I still continue to cook and bake altho not as much as in the past. I do look forward to "seeing" everyone again and reading about all the wonderful things folks are preparing. Here are my Christmas cookies for this year! First "regular" cookies and second GF cookies.

we've got a growing list of GF people in my family. Is everyone experiencing that? I'd be interested in your list of GF cookies @barbara-in-va and how they came out?

Definitely a growing list of GF people in my family/friends/coworkers. I feel awkward bringing a platter of cookies to an event when I know there is at least 1 GF person so I have begun to work on some GF cookies. This little plate includes the age old no bake, stove top chocolate and oatmeal cookie, layered peppermint bark, peppermint meringues, Bumblebees (from Bake from Scratch Holiday 2022 Cookies) which are a mix of dates, walnuts, coconut and sweetened condensed milk-YUM! and a non traditional version of Ricciarelli di Siena from the same Bake from Scratch issue. (I want to find a more traditional recipe for them as they are to die for!!)
 
How nice to see you! I am so impressed with the cookies. We also have an increasing number of GF friends and almost-family, as well as the odd vegan, though that is a choice. I am learning a lot.
 
Since the conversation is about GF cookies, here is what I make.
These are Ricciarelli which is a specialty of Siena. I use KA Measure for Measure GF flour in place of the AP called for.

Wow, these are gorgeous! And then there is a whole other platter of gorgeous, but gf! Yes, I’ve got a gf person in the family now too, but I’ve never tried to bake gf yet. It’s so nice to see you! Hope you can stop by more often. 😁

Hi Paul. I occasionally make GF cookies for friends and my rule of thumb is to 1) up the sugar a bit to overcome the GF flour taste and 2) up the flavoring a bit too. Whether it is vanilla extract, lemon zest, etc.
