Sure... they aren't the hash brown-type, crispy, fried ones, like latkes. They are more
like regular, puffy pancakes to which you add mashed sweet potatoes before cooking. They have a very delicate flavor of sweet potatoes. Here is the recipe that I used:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 large eggs, lightly beaten
3 cups buttermilk
2 tablespoons unsalted butter, melted
1/2 cup mashed sweet potatoes
