I'm having a happy Saturday!

Got a good rest last night and am feeling a bit better today, kind of a lot better in fact! Maybe I've turned the corner!

Made the beef stock last night and let it simmer overnight. It's cloudy but very rich looking with a good beefy flavor. Got fancypants bones from the Fatted Calf, 5 pounds for $10, they're prime rib bones and some lower rib bones, very tasty.

I soaked some tiny white beans last night and cooked them this morning and the minestrone per the post above! I feel like this is a group effort soup, thanks everyone for the help!

Since I went to the butcher yesterday I picked up 2 pork and fig crepinettes and cooked them for breakfast with the last of the bacon fougasse and added a little bacon hot sauce. I haven't felt hungry in a while and it felt good to eat. I'm still full actually.

Anyone watching Last Tango in Halifax on PBS? I just discovered it and really enjoying it, fun to watch while I pop into the kitchen and stir the soup.

All week I have been craving avocados, and it's all that felt good to eat, that and broth and soup. Been scooping them out onto bread or just eating out of the shell with a spoon and some Maldon salt. They're so good right now! Heard why they're so small this year, it's because of that hard freeze we had last year, the trees were damaged and we will have smaller sized avocados for a year or so. Poor trees!

 
My weekend one was start reading Dr. Sleep, if it's Oct there needs to be a scary book!

It's still hard for me to cook much, I did make it to a local hole in the wall taquería that a mexican friend told me to try, and it was wonderful - and, it had a drive thru. Most welcome these days!
