I bought toffee and dried cherries this past weekend remembering a cookie I had made in the past and LOVED. (I don't generally like or bake cookies... so that in itself is telling) and then I couldn't remember where I got the recipe. I did remember posting the recipe at one time... so I looked here, but couldn't find it. Finally I googled "Cookie of my dreams"+"toffee" because I remembered using that phrase when I posted about it and VOILA - there's my post. From 2003!!!!

Here's the recipe below, but I linked to the original post for kicks. Some familiar names on that thread. smileys/smile.gif

Chocolate Fudge Cookies with Toffee and Dried Cherries

2 1/4 c. flour

1/2 c. unsweetened Dutch process cocoa powder

1 t. baking soda

1/4 t. salt

1 c. butter, at room temperature

1 c. tightly packed brown sugar

3/4 c. granulated sugar

2 lg. eggs

1 1/2 t. vanilla extract

1 c. plump, moist dried cherries

1 c. bittersweet or semisweet chocolate, chopped into chunks

1 c. Skor Bits

Preheat oven to 350.

Line two cookie sheets with parchment paper. (or just spray really well with Pam if you dont have parchment) Sift flour, cocoa, baking soda and salt together in a bowl and set aside. In a large mixing bowl, cream together the butter and both sugars until light and fluffy, about 3 minutes. Add eggs, one at a time, beating well after each addition and scraping down side of bowl as necessary. Beat in vanilla. Stir in the flour mixture in 3 additions, blending just until ingredients are moistened. Stir in chunky ingredients until they are evenly distributed.

Drop batter by heaping tablespoons onto cookie sheets and bake them in the middle of the oven. Bake 15-18 minutes, or until barely set in the center and just firm around the edges. Cool on tray for 3-5 minutes and then transfer to rack to cool completely.
