I haven’t looked as to who makes it. A bunch of us bread makers lobbied them to carry central milling organic bread flour (malted), which they did for awhile. Then they switched to a big ag company, so I stopped buying from them. I’d look as to who makes it and look to see the percentage of protein in the flour to help decide. For cookies I tend to use KA unbleached ap, Trader Joe’s has similar. I tend to get a good price on large size ka at smart n final.
