I just iced a cake and hate the idea of it sitting out all night. Although the recipe says not to, I want to.

I'm a rebel like that.

Yet I don't want to screw up this finished cake.

I'm a wuss like that.

 
Never mind. I left it sit out all night. Looks fine. I have some icing left over...will do a test

for posterity's sake in case anyone else has this question.

 
...and the answer is YES, you can put "blender icing" in the refrigerator.

I put a sample in last night, let it sit on the counter all morning and it's perfectly fine.

 
Debbie in GA's *Blender Icing* aka Rosie's Best Chocolate Fudge Icing

This is buried inside the cake recipe so I thought it would be easier to find this way. Also, I scaled up the original to use the entire can of evaporated milk. I'm not sure why the original recipe is the way it is, unless the unsweetened chocolate came in 6 oz packages and she went with that.

So here is the original:
6 oz unsweetened chocolate
1 Cup + 2 TBL evaporated milk
1.5 C granulated sugar

Melt chocolate. Add milk and sugar to blender. Zap. Add cooled chocolate and buzz for several minutes until you hear the sound change as the chocolate mixture thickens.

I scaled it up to used the entire can of milk:

8 oz unsweetened chocolate
1 12-oz can of evaporated milk
2 Cups of granulated sugar
