Has anyone ever had these cookies? Grey Ghost Lemon Sugar Cookies?

They are from a bakery in Carolina Lowcountry called Grey Ghost. My husband got a sample in a gift box from a company called Mantry. I absolutely love them and would love to make some for the cafe. They have crystallized lemon peel in them. If you have any recipes that might come close to these, I would appreciate it. They are not a crisp cookie at all. Can you describe the cookie more? Are they soft? Do they look like they

flattened on their own? How golden is the bottom?

Remember, you can add an extra punch of lemon flavor with powdered lemon.

Hey Mar, take a look at the link that Gay posted above.

It has a picture of the cookies and a basic sugar cookie recipe. It looks exactly like the lemon sugar cookies.
There was definitely little pieces of crystalized lemon zest in them. They weren't exactly a crisp or soft cookie. Sort of like a shortbread texture. The cookie has what looks like little pieces of white chocolate, but somewhere I read that it is pearlized sugar. Gay posted a link for their sugar cookie recipe but there is no mention of that special sugar. The sugar pieces aren't crunchy at all. I am going to give that sugar recipe a try and see how it turns out. Thanks, Mar!

 
So...same amount of flour, slightly more butter, slightly less sugar, egg, no almond flour.

Maybe it's the almond flour that keeps them rigid?

So check around for southern-style Lemon Bundt Cake recipes from ~25 years ago.

 
Dawn, I hope you don't have a headache from all this (LOL) but why

not try Grey Ghost's sugar cookie recipe and either try the candied lemon from the other cookie in it or just try to replicate the lemon taste in the sugar cookie. Does that make sense?

 
It does. In the photograph you can see little pieces of sugar on it.

That is how the lemon cookie looked, but the sugar wasn't crunchy. I hate crunchy sugar texture on cookies. I will let you all know how they turn out.
