Here is a turkey croquette recipe from the Silver Palate. REC: Turkey Croquettes
My girlfriend made these and said they were very good. I love almost anything I have ever made from the Silver Palate cookbooks.

I've not tried this recipe, but it looked like a good idea to me for those interested in something new and different to do with leftover turkey. Also, through step 4, a good thing to make a day or two ahead of time, or freeze for another occasion. Feeds six. From the Silver Palate girls:
3 slices bread, crusts removed
1/4 c milk
2 1/2 cs coarsely chopped cooked turkey
1 cup coarsely chopped onion
2 eggs, lightly beaten
1 teaspoon dried thyme
salt and pepper to taste
2 cups seasoned dried bread crumbs
3 tablespoons chopped fresh parsley
2 tablespoons paprika
3 tablespoons unsalted butter, melted
1 cup corn oil
2 tablespoons unsalted butter
Optional: leftover gravy
1. Soak the bread slices in milk for ten minutes, remove bread, squeeze dry and shred into large mixing bowl.
2. Add the turkey, onion, eggs, thyme and salt and pepper. Mix, then move mixture to a food processor and pulse a few times to integrate the mixture, but do not puree. Cover and refrigerate for about an hour.
3. Combine the bread crumbs, parsley, paprika and melted butter in a pie plate.
4. Shape the chilled turkey mixture into six large patties. Coat them with the bread crumb mixture, cover and chill to let crust set or wrap individually and freeze for another time.
5. Heat 1/2 c of the corn oil and 1 tablespoon of the butter in a large skillet. Cook the croquetts over medium heat, three at a time, until golden (about 10-12 minutes total). Repeat with remaining patties adding more oil and butter if neccessary. Top with heated leftover gravy.
