Has anyone ever roasted corn on the cob in the oven?

I want to make this recipe for dinner tonight but wonder about the length of time in the oven. I normally only cook my corn on the cob in a pot of boiling water for 2 or 3 minutes - I wonder if 20 or 25 minutes at 400 degrees would be too long? Anyone who has experience with this would be appreciated!

REC: Roasted Corn on the Cob with Cilantro-Lime Butter

Yield: 6 servings

6 ears corn, shucked

Cilantro Lime Butter, recipe follows

Preheat oven to 400 degrees F.

Coat each ear of corn in 2 tablespoons of the cilantro lime butter and wrap individually in foil. Roast until hot and steaming, about 25 minutes. Serve with extra butter on the side.

Cilantro Lime Butter:

2 sticks unsalted butter, at room temperature

1/4 cup chopped cilantro leaves

1 lime, zested and juiced

2 teaspoons salt

3/4 teaspoon cayenne pepper

Put the butter in a mixing bowl and, using a rubber spatula, mix in the cilantro, lime zest, lime juice, salt and cayenne. Use immediately or refrigerate.

Yield: 3/4 cup

 
sure sounds good - I would think 20 min. would be fine.

I have wrapped corn in foil (with a little butter) and stuck it in the oven if I am already baking something anyway. When you have it wrapped up like that, it holds the moisture in and 'steams' it, which takes a little longer than being surrounded by boiling water.

Yes, I used this technique for the Roasted Corn, Mango...

and Jicama Salad, and they cooked perfectly with a slight char.

Corn review:

This was pretty darn good - my internet crashed (some brush fire in a town south of here) and I couldn't access the recipe like I planned so I forgot the cayenne. It really would have benefited from it.

I didn't think you could taste the cilantro much, but then it's not one of my "trigger foods" like it is for some. My only complaint was that it took FOREVER to cook. I had really big ears of corn, and it just didn't roast in the 25 minutes like the recipe said it would. More like 35 or even 40.

And here I was worried about overcooking it!

 
YUP, That's how long it should take..

My recipe ( Post# 2935 ) states to roast the ears at 400 degrees for 45 Minutes.
