Has anyone ever tried maitake mushrooms? AKA chicken-of-the-woods mushroom = sulfur mushroom ?

Yes

The first time I tried a dish with them it was at a restaurant and it triggered one of my attacks. I have since found out that mushrooms are high in glutimates and these seem to be particularly high in them. MSG doesn't always trigger my attacks but more often than not it does so I watch my consumption of MSG and now mushrooms as much as I love them. It seems that mushrooms in restaurants trigger it more so I often wonder if they are 'treated' with MSG or something.

Meant to say that the second time I tried them from an organic farmer, they really didn't bother me so I will eat them when I can cook them myself or know the source. I really like making 'creamed' mushrooms using an assortment of mushrooms, sauteeing until they are nice and caramelized along with some shallots, then adding cream, thyme, parsley, freshly ground pepper and salt.

I could fall into a vat of that, M. Here's another good quote from The Gilmore Girls:

(Sookie is the brilliant chef for the inn's kitchen. Jackson is her vegetable vendor...and boyfriend.)

CUT TO INDEPENDENCE INN KITCHEN

SOOKIE: You've got all the mushrooms? You double checked?

JACKSON: I've triple checked. I've quadruple checked.

SOOKIE: The shitake, the nameko, the chanterelle?

JACKSON: Once again, I've got it all.

SOOKIE: The matsutake? The makeniya?

JACKSON: Uh wait.

SOOKIE: What?

JACKSON: I don't have makeniya.

SOOKIE: You don't have makeniya?

JACKSON: I don't have makeniya.

SOOKIE: I made it up. (giggles) You passed the test.
