I must confess, it was one of my "kitchen Angels" that made the balls for me, I was busy putting something else together. the melon baller was just for uniformity of size. I think she just pushed the cheese out and rounded it in her hand. you must chill them before dipping or you will end up with premature melt down.
if you get a "log" of Cherve, maybe just slicing it uniformly would be fine. or, you could just dip the entire log, plate it and let your guests try figure out what it is and what to do with it '-)))
