I see a few new products out there with ceramic non-stick. My only experience...
...with ceramic-coated non-stick cookware is with a Scan Pan I bought years ago. I wasn't very happy with it, as I didn't think it lived up to its advertising. It wasn't much better than a standard stainless steel pan.
When I called the company I was told to "use more oil or butter". Not exactly what I wanted to hear. If you use enough oil or butter, almost ANY pan is non-stick.
Perhaps the technology is better now?
