Has anyone here tried Alice Medrich's "ice bath" fudgy brownies? Comments?

I say they are the best...

I've ever made or eaten.They are my definition of a brownie: Dense and fudgy. I sent a batch to a niece in her senior year of college-she says they helped her survive finals. And she's made them herself may times since, even though she has little interest in baking.

 
Oh excellent, DJM...because I want to mail these. A few more questions...

One comment online said hers never baked all the way through. Same person said the sugar didn't dissolve, so I was worried about gritty.

I was also concerned that they might be runny at room-temp and thereby un-mailable.

Did you use regular sugar...or extra fine sugar?

By any chance do you remember what type of unsweetened chocolate you used?

I was thinking of baking/mailing in disposable pans, uncut? Any thoughts on that....

If you lived up here, you wouldn't need the water bath, just place the pan in the snow out back.

 
No problems with making these...

In her book-Bittersweet,in the introduction to the brownie recipes, Alice says to get the chocolate /butter mixture quite hot--about 150 degrees F., then immediately add the sugar and salt and vanilla and stir. She is emphatic about beating enough after the flour is added.

I followed her directions to the letter, and was very pleased. I think I used Ghiradelli chocolate for the batches I mailed, and regular sugar-the direction don't call for superfine sugar. I placed the uncut square of brownies between two pieces of heavy cardboard for mailing: Jenna said they were just fine when the box arrived at her dorm.

 
not really. I have 2 bottles of wine chilling out back right now, and some bread dough to bake

tomorrow. It's above freezing right now, but will freeze again this weekend. The wine does fine if it doesn't dip too low. meanwhile, I walk around with cleats on my shoes for all the ice on the roads and walks and parking lots. We had a warm-up and rain on top of all the snow which turns to ice and a huge pain in the patootey. literally. Our driveway is the worst. I wish it would just stay cold and snowy. that way we don't have this dreaded ice.

 
Ah, I'll bet I know the difference now. Those comments referenced the same recipe in "Chocolate

Holidays." I checked the book out from the library and there is absolutely no specific details like that. It just says to stir frequently until the chocolate is melted.

See, it's having friends like this that will save my brownie reputation (some folks might automatically replace reputation with butt.)

Good hint about the mailing method too. I'll use that.

Thank you; I'm a long-time lurker....

from the old days over on that other site. I was bereft for months until discovering where everyone had re-assembled themselves. I enjoy the humor here, and many of my favorite recipes come from this group.
