Has anyone made a non-dairy panna cotta? (almond milk? coconut milk?).

No experience, but here's a pumpkin GF/Dairy-free/egg-free custard

NOTE: Elana DOES NOT RECOMMEND using canned pumpkin. She says it's too wet. However, you might try that Cook's Illustrated idea of blotting the canned stuff on paper towels to condense the flavor/remove the excess liquid.

Or roast your own. I'll be sweet Garnet yams would work really well with this.

What about haupia? The Hawaiian coconut dessert, it's really tasty.

I also make coconut rice pudding using aborio rice, I've made it will all coconut milk at it's terrific, spoon into individual dessert bowls and put toasted coconut curls on top and perhaps crushed pineapple.

 
I can't remember if I wrote up my coconut rice pudding recipe, I will look.

I don't have a recipe for haupia, maybe Cathy does?
