I think it will be good--you really can't beat a good chuck roast--but I think today's
chuck is not as tough as formerly and I'd start checking it a lot sooner than 7 hours.
I think the added stuff is just to make a flavorful gravy which it should.
Thanks everyone, I ended up going with the second posting of the roast
cooked with the instant coffee powder, bourbon, tomatoes, etc. It is in my crock pot and I must say the flavor of the sauce so far, is very complex and developing nicely. Later, I am tossing baby red potatoes and baby white turnips.
Yea, and why I made the second choice. It was excellent, had a lot of gravy
left over to freeze. Great flavor imparted into the potatoes, turnips and carrots too. I actually rubbed the meat down with a new McCormicks spice for meats, Bourbon and Brown Sugar. It browned up nicely too on the sear at the beginning.
