Has anyone made W&S's Welsh Bara Brith? (loaf bread with fruit)

Not theirs, but I used to make this as a teenager. It's spongey-moist, which some people think is

undercooked.

 
Shaun, did yours have yeast in it? This one calls for baking powder and soda...which I goofed big

time and added 4 TIMES the amount of baking soda. (2 tsp instead of 2 tsp of baking powder and 1/2 tsp of soda). What a friggin' waste of 3 cups of dried fruit.

All the recipes online call for yeast.

It's still baking so I have no clue how bad it's going to turn out.

 
I don't think so--I wasn't into yeast back then, just quick breads. Mine was a Cardiff family

recipe so I assume somewhat authentic, but like any fruitcake, you'll find lots of variations.

I remember it was dense with raisins and currants, and had brewed tea in it. Or maybe the fruit soaked in the tea first. Can't remember, sorry.

 
Yes...you brew strong tea then add the dried fruit to it to plump, then add all

to the batter. Turned out pretty good, although the center part collapsed. I cut that out and brought the borders into work and will rebake the center part tonight.

Probably had something to do with the 4 TIMES too much Baking Soda goof.
