Has anyone ordered vanilla beans from AMADEUS VANILLA BEANS? Highly

recommended by Trish Boyle in her "FLAVORFUL" pastry book.

I own a couple of Trish's books and trust her recipes. Only...there are SO many different kinds of vanilla beans these days.

Let's start with what is available locally to me:

Ingles McCormick sells one bean = $6.95

Walmart own brand had one organic bean = $11.98

Neiman-Massey one bean = $10.51 (through Walmart online).

I have no idea what's available in Asheville.

Now look at what Amadeus offers:

Buy UGANDA GOLD Vanilla Beans

Buy Madagascar Bourbon Vanilla Beans

Buy Extract Vanilla Beans (for Making Home Made Vanilla Extract)

Buy Papua New Guinea Vanilla Beans

Buy Tahitian Gourmet Vanilla Beans

Buy Pure Ground Vanilla Beans

Buy Indonesia Vanilla Beans

Buy India Vanilla Beans

I am totally confused now. Last time I bought in bulk, I bought 15 Madagascar off Amazon years ago and then promptly lost them for two years. I finally used the last one because I doled them out like gold and only in a recipe where flavors are mute and the vanilla would shine. Now I SWEAR every single book I'm reading now uses vanilla beans for everything. Seriously. Are ingredients considered a TAX write-off when a chef is writing a book? One Asheville barbeque cookbook tossed one in BAKED BEANS!

There is a discount for buying more than one pound, but one pound is ~$400 for ??? beans plus free shipping.

There is NO UNIVERSE in which I'm spending $400 on vanilla beans when I'm donating all of my pastries anyway. Even with free shipping.

Many of their items are "OUT OF STOCK", but I'm considering just buying 5 beans for company desserts. 5 for $25 +S/H, so that extra cost might cancel it out.

Vanilla Paste - sort of off topic

I loved the vanilla bean paste I bought at Trader Joe's many years ago so before I suggested "buy vanilla paste," I went to The Google and found this article, "The Scandal Between Vanilla Bean Paste vs. Vanilla Extract". While the paste receives excellent reviews, much to my surprise I now know that the flecks in the paste are ground up bean and not vanilla seed infused as one might expect. Maybe everyone knows this already smileys/wink.gif Colleen

Nielsen-Massey's vanilla paste ingredient list
Sugar, water, vanilla extract, vanilla beans, gum tragacanth

1 Tbsp. vanilla bean paste = 1 Tbsp. vanilla extract = 1 whole vanilla bean = 1 Tbsp. vanilla powder
