Has anyone tried SAGE DERBY blue cheese? It's from England.

It's on sale this week...although still obscenely expensive. Apparently it goes well with Chardonnay.
I, on the other hand, am still dreaming of Magnolia's homemade potato chips with melted Maytag blue cheese.
 
It was on sale ($20/lb down to $15) and then I got another $2 off for using customer card. So I went ahead and paid $6.04 for a slice of very Dr. Seuss-ish green-ish (dare I say sage green) blue cheese.

Wish me luck. I'll have a Brillo pad waiting in the wings.

I have yet to meet a bleu cheese I didn't like! I do favor either Marian Blue, made in Massachusetts, or Cambazola but I'll not shy away from any of them.
 
I tried the Sage Derby years ago, thought it was meh. Hope your chips turned out well! I recently tried Rogue Creamery Smokey Blue--spectacular!

I thought it was ok but not as good as some others. I still love good old fashioned Roquefort more than most other blue cheeses. But my absolute favorite is Blue Jay by Deer Creek Cheese. OMG - had it in Charleston many years ago at what was one of the top restaurants there at the time and it was heavenly. I have a cheese monger that now concentrates on curating cheeses for the top restaurants here and now she uses their cheeses after I had her get it for me the first time. It is a juniper berry-infused quintuple creme blue cheese. The juniper berries just put it over the top and I didn't even think I liked juniper berries/gin. It shows that Whole Foods carries their products in most areas and then other local places are listed by state.

BTW - remember when we were all going gaga over Ina's baked potato chips? I used to make those and then melt some gorgonzola (or whatever blue cheese I would have on hand) with some heavy cream and serve it with them and I still do it from time to time. A restaurant here used to have housemade potato chips with melted blue cheese on them and they were also to die for. But Ina's chips were better!

I wasn't on that bandwagon but I would like to give it a try. I googled and found a lot of confusion. Do you make a dipping sauce or drizzle it on or.....? What about sprinkling crumbled cheese on when the baking is finished? I reallly have not heard of this before.
