I like to think I can make a good pie, but these are gorgeous; I feel sooo depressed!

Some times at fairs we get beautiful pies similar but NOT as beautiful as these. Sadly, all too often the really pretty pies are not cooked correctly, usually underdone, quite underdone--but they ARE pretty.

True Confessions here: I am too freakin' lazy to make a beautiful pie like these. BUT, though my pies are plain, they are cooked right and tasty. Maybe some day, but I am "of an age" so I really doubt it; like I said, too lazy.

But I’ve found you can’t make designs like that with a flaky pie crust, and I won’t give up taste for design. In my book taste always comes first and I love Dorie’s good for almost anything crust. You can’t do this kind of designs with it — I’ve tried.
