I've been making homemade cottage cheese but needed a more Polish style Farmer's Cheese. Well I started down one path and then another and invented my own cheese that I like. If you like cottage cheese but find it a little bland, try this.

Take one quart of buttermilk (I used organic) in the cardboard container and place it in a pan and fill with water to at least 1/2 way up the milk container. Bring to a boil and boil for 20 minutes.

In at least an 8 qt pan, add the buttermilk (will be somewhat curdled and separated) and one gallon of whole milk. Bring to a simmer of 130-140. Remove from heat and stir in about 1/4-1/2 cup white vinegar and stir. It will curdle. Drain in cheesecloth and rinse. Salt to taste and return to a strainer lined with cheesecloth and place over the pan. Let continue to drain either at room temp or in the fridge.

I just pour - I've made the cottage cheese so much I don't measure -

it really doesn't seem to matter - just pour and stir for a minute and if it doesn't curdle up, add a little more.

 
That's where I got one idea but couldn't get goat milk...

and I didn't know where to get rennet. So then I found a couple of recipes from Northern Europeans and sort of just combined ideas from there.

 
Ah...FYI...If you have a beer brewing supply place near you, they usually have the rennet.
