Hazelnut Macaroons

Canadian Living – December 4, 1989

These chewy cookies are easy to make and will satisfy your desire for good old-fashioned macaroons.

2 c flaked coconut

2/3 c granulated sugar

¼ c all purpose flour

¼ tsp salt

4 egg whites

1½ c hazelnuts, chopped

¼ c candied cherries, red and green, slivered

1 tsp vanilla

In large bowl, stir together coconut, sugar, flour and salt. Whisk egg whites until foamy. Stir egg whites, hazelnuts, cherries and vanilla into coconut mixture. Drop by tablespoonfuls onto lightly greased baking sheets.

Bake in 325°F oven for 20 to 25 minutes or until edges of cookies are golden brown. Let cool on racks.

Makes about 40.
